Happy Monday…err, Tuesday!
I hope you all had a great weekend break. We did a TON of activities at the Burn’s
household. David worked 36 hours of the
weekend, with24 of them being overnight shifts, so we were still able to pack in
a whole lot of family time and a bunch of chores and house projects that we
have been sitting on. I love the feeling
of accomplishment and knowing I have a completely clean household when I get
into bed on a Sunday night, don’t you?
I usually am not much of a cook (unless it’s Fall which is
when I bake like crazy) but lately I have been having lot of fun experimenting
with eats and treats for the family. Thank
you, Pinterest. I made a new recipe over
the weekend and we loved it! I have to
share because not only is it easy to make, but it’s healthy and very versatile. As an added bonus, I only used one pot which
makes dishes and clean-up even that much better.
The recipe itself has quite a bit of flavor, however, I did
add salsa to mine and the hubs added some crazy hot sauce…yikes! If you want, add some tortilla chips on the
side or toss the mixture in a warm tortilla for the kids. My children rave over “quesadillas” so any
time I can find something new to stuff in them; it’s a win-win. Now, we didn’t add any cheese to ours due to
