Chicken & Sweet Potatoes

I pinned a new recipe this past week and we put it to the test over the weekend.  Because it was a family hit and easy to prepare (although we all know I didn’t have much to do with the preparation) I wanted to share the recipe with all of you.  We eat a lot of meat and vegetables in our house because they are Brady friendly foods but it has begun to feel like we were making the same meals again and again.  This was a new twist on chicken with a “dippy sauce” for the kids and a way that I actually like sweet potatoes (I loathe the Thanksgiving version with marshmallows, brown sugar, etc.). 
 

 This was a Pinterest find and you can link to the recipe here.  We used rosemary from our spice cabinet, but next time we will definitely use the stalks as recommended.  Tessa wasn’t a huge fans of the “tree leaves” so it was a bit of a pain to pick them off.  Also, I made my chicken breast without bacon.  It did add some additional flavor and keep the moisture in with everyone else’s, but either way works.  Enjoy!
